For the sequential twin-turbo power delivery and broadest torque curve the 2JZ-GTE is known for, look for a manual transmission car, automatic cars run both turbos in parallel and lose the staged low-rpm response. VVTi cars (1997 onward) have slightly improved low-end torque over earlier non-VVTi cars, though this is a running production change rather than a reliability fix, so it should not be the deciding factor on its own.
